Vermicelli, locally known as Shemai in Bangladesh, is a type of thin pasta made from wheat flour. It is a key ingredient in many South Asian desserts, especially shemai payesh (sweet vermicelli pudding) prepared with milk, sugar, and nuts. Vermicelli can also be lightly fried in ghee before cooking to enhance flavor. In addition to desserts, it is sometimes used in savory dishes like upma or stir-fries.
