Description
Panch Puran, known as পাঁচ ফোড়ন in Bangladesh, is a traditional whole spice blend that is a cornerstone of Bengali and East Indian cuisine. Its name literally translates to “five spices” and it uniquely combines fenugreek seeds (মেথি), nigella seeds (কালো জিরা), cumin seeds (জিরা), black mustard seeds (কালো সরিষা), and fennel seeds (মৌরি) in equal proportions. This aromatic blend is typically tempered in hot oil or ghee at the beginning of cooking, releasing a complex symphony of flavors that is pungent, sweet, and slightly bitter. It is essential for flavoring dals, vegetable dishes, fish curries, and pickles, providing an authentic and irresistible aroma.
