Green Banana, referring to unripe bananas used as a vegetable, is locally known as “Kacha Kola” in Bangladesh. It has a firm, green skin and a starchy, firm, and savory flesh, distinctly different from ripe, sweet yellow bananas. Scientifically part of the genus Musa, green bananas are staple crops in many tropical and subtropical countries, including extensive cultivation across Africa, Latin America, and Southeast Asia. They are widely grown throughout Bangladesh. In Bangladeshi cuisine, green bananas are a very common vegetable, frequently used in curries with fish or meat, stir-fries, and mixed vegetable dishes. They are valued for their starchy texture that helps thicken curries and their ability to absorb flavors, making them a versatile ingredient in many savory preparations.
